Healthy Banana Nut Breakfast Cookies
Ingredients:
- ½ cup oat flour (can be made by grinding whole oats in a blender or food processor)
- ½ cup rolled oats
- 2 egg whites
- ¾ cup unsweetened vanilla almond milk
- 1 medium banana (mashed)
- ¼ cup dried cranberries (optional)
- 1 tbsp unsalted walnuts or almonds (optional)
- 1 tsp. cinnamon
- 1 tsp. honey
Directions:
- Preheat oven to 350 degrees.
- Spray a non-stick cookie sheet with zero-calorie cooking spray (i.e. Pam)
- Place all ingredients in a large mixing bowl and fold mixture together until well combined (**important to mix by hand and not in a blender**)
- Scoop batter onto cookie sheet into ¼in. balls
- Bake 12-14 minutes or until edges are golden brown.
