Homemade Healthy Margarita Pizza

healthy, low-fat version of the classic italian margarita pizza
Ingredients
  • OAT FLOUR DOUGH:
  • 1 ½ cup Oat flour, firmly packed
  • ¼ cup Parmesan cheese, grated
  • ¼ tsp Salt
  • ¼ tsp Garlic powder
  • ¼ tsp Italian seasoning
  • 1 ½ tsp Baking powder
  • 2 Large eggs
  • 2 tbsp Honey
  • 2 tbsp Plain non-fat Greek yogurt
  • 1 tbsp Water[br]
  • TOPPINGS:
  • 1 tsp olive oil
  • 3-4 garlic cloves, minced
  • 2-3 roma tomatoes, thinly sliced
  • ¾ cup low-fat shredded mozzarella cheese
  • ¼ cup basil
Instructions
  1. Preheat oven to 400 degrees. Spray a 9×9 pie dish, round cake pan, or springform pan with cooking spray.
  2. In a medium bowl, combine the dry ingredients (for the dough) first, then add the wet ingredients and stir to combine, until a dough forms.
  3. Press dough into prepared pan.
  4. Bake dough for 10 minutes at 400 degrees.
  5. Once dough is done, brush crust with 1 tsp olive oil and sprinkle minced garlic evenly over the crust.
  6. Sprinkle cheese evenly over the crust and top with tomato slices.
  7. Bake for an additional 5-10 minutes or until crust turns golden brown.
  8. Remove from oven and top with shredded basil.
  9. Slice into 8 pieces, serve and enjoy.
