Healthy Margherita Pizza Zucchini Boats
 
Ingredients
  • 4 Medium Zucchini
  • 1/2 Cup All-Natural Marinara Sauce (or Pizza Sauce)
  • 2 Roma Tomatoes
  • 1 Cup Fat-Free Shredded Mozzarella Cheese
  • 1/2 Cup Basil (Chopped)
  • Sea salt (to taste)
Instructions
  1. Preheat oven to 350 degrees (F)
  2. Wash zucchinis and cut the ends off
  3. Next, slice the zuchinnis in half
  4. Using a spoon, lightly scrape out the seeds — making a shallow trench
  5. Lay zucchinis on a lightly-greased baking sheet
  6. Pour the marinara sauce (or pizza sauce) into each zucchini boat
  7. Evenly sprinkle the shredded cheese across each boat
  8. Thinly slice the roma tomatoes and place 4-5 on each zucchini
  9. Top with basil and a little sea salt
  10. Bake in over for 25-30 minutes
