Healthy Tuna Salad Cucumber Bites
Instead of drenching your tuna with mayonnaise (making it a caloric no-no), try this tuna salad cucumber recipe instead! It’s full of flavor, super healthy and great for the kids too!
Healthy Tuna Salad Cucumber Bites
Ingredients:
- 1 whole cucumber
- 1-can white albacore tuna
- ½ medium avocado
- ⅛ cup finely chopped red onion
- ⅛ cup finely chopped tomato
- ½ lime
- Salt
- Pepper
Directions:
- Scoop out half an avocado and mash well.
- Squeeze half a lime into the avocado mix.
- Drain tuna from can and mix into avocado mixture.
- Add onion, tomato, salt & pepper and mix until well combined.
- Cut cucumber into ½ inch slices. Top them with the tuna/avocado mixture, or lay them out for dipping/scooping.
