Homemade Honey Coconut Almond Granola

Many people make the common mistake of assuming all granola is “healthy” and good for you. What they don’t realize is that many store-bought granolas are PACKED with sugar and other non-diet-friendly ingredients!

Don’t want to give up that extra crunch it adds to your yogurt? Here is an easy recipe for homemade Honey Coconut Almond Granola that you don’t have to feel guilt about eating.

Homemade Honey Coconut Almond Granola

INGREDIENTS:

  • 2 cups old-fashioned rolled oats
  • 1/2 cup shredded or flaked unsweetened coconut
  • 1/2 cup chopped slivered almonds – optional (could sub with walnuts or pecans)
  • 1 tbs honey
  • 2 egg whites
  • 1/3 cup baking stevia (or Truvia)
  • 1 scoop vanilla protein powder – optional

DIRECTIONS:

  1. Preheat oven to 325 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, mix all ingredients together until combined well. (Note: mix with a spoon or fork; do not use a blender as it will turn the oats into flour).
  3. Spread granola mixture evenly on to your prepared baking sheet.
  4. Bake for 15 minutes.
  5. Remove from oven and mix around (so granola toasts evenly on all sides), then return to oven for another 10-15 minutes or until golden brown.
  6. Store in airtight container. Enjoy!
