These peanut butter cups are a healthy alternative to America’s favorite candy — Reese’s Peanut Butter Cups! They are a great post-workout treat or to curb those gnawing chocolate cravings.
 
Ingredients
  • Chocolate Layer
  • 1/4 cup Unsweetened almond milk (or skim milk)
  • 1/4 cup Plain fat-free Greek yogurt
  • 1/4 cup Cocoa powder (unsweetened)
  • 2 tbs p Chocolate Protein powder (or additional cocoa powder)
  • Pinch Salt
  • 1 tbs p Baking Stevia (or 2 tbsp sweetener of choice)
  • Peanut Butter Layer
  • 1/4 cup Peanut butter (all-natural, creamy, unsalted)
  • 1/2 tbsp Baking Stevia
Instructions
  1. Mix all ingredients for chocolate layer in a small bowl.
  2. Pour chocolate evenly into 14 silicone muffin liners.
  3. Place in freezer for 10 minutes or until slightly firm
  4. While chocolate layer is hardening, place peanut butter in a small bowl and microwave in 30 second intervals until melted.
  5. Stir Stevia into peanut butter.
  6. Remove muffin liners from freezer and evenly pour peanut butter layer into each cup.
  7. Place back in freezer for 1-2 hours, or until firm enough to remove the liners.
  8. (Note: These must be kept and stored in the freezer! They can be enjoyed by popping them out of the freezer about 10 minutes before enjoying!)
